Chicken Tzaziki- Lazy Dinners

There are a million ways to make this recipe. It’s best if you marinate the chicken overnight, but I’ve seasoned it just before throwing it in a saute pan and it’s still good. Below, I give instructions on how to prepare it in a slow cooker. This is an easy recipe to get in the habit of preparing in the morning so you come home to dinner. If you are a parent and have never done this, do your evening self a favor and try it out. Meal plans and early morning prep are game changers if you are tasked with cooking for a family. And yes, I also resisted those things for many years. I’m here to keep you from making the same mistake. I do recommend buying some shawarma spice online. It’s what makes this special and different and while you’ve probably got the ingredients to make your own (recipe below), it is not a lazy dinner if you are mixing 6 spices together, at least not in my book.
If you do forgo the slow cooking method, you can saute these thighs until cooked through just before eating.
Instead of pita, we use lettuce leaves and wrap the chicken in them, before we drizzle the tzatziki on top. The kids get so much bread out in the world, it’s nice to have meals without it at home. But by all means use pita if you want to.
3 lbs Boneless Chicken Thighs
1 bunch Green Onion (Sliced)
1 tbsp Avocado Oil
3 tbsps Shawarma Spice Blend (See recipe in notes section to make your own)
1/4 cupWater Or Chicken Broth
12 Leaves Butter Or Romaine Lettuce (Large Leaves)
1 1/2 cups Plain Greek Yogurt Or Coconut Yogurt
2 tbsps Raisins (Black raisins)
1Persian Or English Cucumber (Finely diced)
1/4 cup Fresh Herbs, Any Combo (Parsley, dill, chives & mint are good options)
2 tbsps Extra Virgin Olive Oil
Add the chicken, shawarma spice mix, oil, green onions and water to the slow cooker. Set to medium heat for 4 hours or low heat for 6-8 hours if you’ll be out of the house all day.
Meanwhile, prepare the tzaziki: In a small bowl combine the yogurt, cucumber, salt, herbs, raisins and olive oil.
To serve, wrap the chicken in the lettuce leaves and serve with tzatziki sauce
