Stewed Beef Tacos- Lazy Dinners
I love an intricate Mexican feast. I tend to do those on the weekends when my time to be in the kitchen can be more spacious.
This is a weeknight adaptation, designed for maximum flavor and minimum prep time.
2 1/2 lbs Beef Stew
1 container Salsa (Fresh, your preferred spice level)
1 package Taco Seasoning
1/4 cup Water
10 Corn Tortilla (Medium)
1 jar Sauerkraut (Latin flavored one like Curtido)
2 Avocado
Start this recipe in the morning to eat it for dinner the same night. Add the beef, taco seasoning, water and 1/2 cup salsa to a slow cooker.
Set to medium heat for four hours. Check after 4 hours. If it's not close to finished, turn heat up to high and cook 2 more hours. You can tell it's finished when you press down on the meat with a fork & it falls apart.
Heat the tortillas, serve tacos with more salsa. Other things we like to add when we have them: avocado, curtido (salvadorian sauerkraut). and spicy mayo.
